Flower of salt forms as a thin, fragile crust on the surface of the Adriatic, the first fine crystals to gather before they sink. At Solana Nin they are skimmed off by hand.
The saltworks sits on old Roman salt pans beside the town of Nin, on the Dalmatian coast near Zadar. The crystals are lifted only on still mornings and calm evenings, dried by the sun and the bura wind that comes off the mountains. Nothing is added, and the salt is certified organic.
The flakes are soft and light, and they melt quickly on the tongue with a clean, briny brightness that sharpens the flavour of whatever they touch.
Use it as a finishing salt, scattered over grilled fish, ripe tomatoes and olive oil, warm bread, or even a square of dark chocolate, added at the table for the final touch. The cork-topped jar also makes an easy, thoughtful gift for someone who likes to cook.
