The caramel in this small jar is thick and glossy, rich and creamy at first and then finished by a light, clean saltiness from the flower of salt stirred through it.

The salt comes from Solana Nin, the salt works in the shallow lagoon of Nin on the Dalmatian coast, which has a history of more than 1,500 years. Flower of salt is the first salt to crystallise on the surface of the brine, and it is gathered with a fine sieve on calm, sunny mornings.

Spread it on warm toast, pancakes or a croissant, or spoon it over ice cream for an easy dessert. The 80 g glass jar also fits neatly into a gift basket of Croatian sweets.

Solana Nin is a sea salt works in the shallow lagoon of Nin, in Zadar County on the Croatian Adriatic, with a history of more than 1,500 years and a Roman sluice gate still standing on its 55 hectares of salt fields. Production resumed in 1954 after about five centuries of pause, and the salt is still made by natural evaporation with sun and wind and collected by hand, while the flower of salt is gathered from the brine surface with a fine sieve. In 2022 the works received the EU Ecolabel, and today it also runs a salt museum and sells salt, flower of salt and salt based delicacies.
