Maraška is an indigenous Croatian sour cherry, and this aceto turns it into a sweet and sour condiment for the table.
Ana and Krsto Matulić make it on the island of Pašman from 75% maraska cherries, 15% wine vinegar and 10% sugar, then leave it to age for two years in wooden barrels. It won a Great Taste award in London in 2022 and again in 2025, when it also received a Golden Fork.
The cherry sweetness sits against a clean sourness. A few drops suit fresh cheeses and cold fish starters, and it is just as good over fruit salad, ice cream or a chocolate cake. The makers also like a dash of it in a gin and tonic.
