Old Pilot’s Gin Barrel Aged is our award winning gin rested in first fill Croatian and American oak barrels. Botanical ratios are slightly changed but we still use 6 Croatian handpicked botanicals from Mediterranean and continental part of Croatia. After distillation gin in rested in five different barrels. They differ by volume, type of oak, toasting/charing levels, preparation, … each giving its own signature and complexity to the final spirit.
American oak gives us sweetness, vanilla and smokiness at the back while Croatian oak builds pleasant bitterness and dry fruit.
Old Pilot's Gin Barrel Aged is perfect in cocktails usually mixed with whiskey as border between whiskey and gin fades away.

Full process from preparation, distillation, maturation, bottling, labeling and wax sealing is done by hand. Every bottle is unique and special.

Out process, selected botanicals and unique distillation technology allow us only high quality spirits. We are not high volume distillery. We are small batch distillery and everything from distillation to bottling is done by us and in our very own distillery. Quality and authenticity without compromises.There are easier ways to produce spirits. Extracts, faster distillation, smaller cuts, …. that’s not us. We only use heart of distillation cutting out bad alcohols at the begining and at the end of the distillation process.We are proud on every bottle that came out of our distillery.
