Pour a little Izbor over warm bread and the first impression is green: fresh grass, green almond and artichoke, with a fruitiness that runs from medium to pronounced.
The oil comes from Stancija Meneghetti near Bale in Istria, a 19th century farming estate restored in the early 2000s, where 700 olive trees grow among the vines. Izbor, Croatian for "selection", blends four varieties: Buža and Leccino at 30% each, Rosinjola and Bjelica at 20% each. The olives are picked by hand in mid October, reach the mill within six hours and are extracted cold, at no more than 28°C, without added water.
Bitterness and pungency stay balanced and refined. Use it on salads, fish, meat and vegetables. The bottle comes in a black box, which makes it an easy present for anyone who cooks.
