Product Description
Viola Tonda has a green, fresh fruitiness of medium intensity, with almond, apple, banana and a light floral note.
It is a single variety oil from Buža, written Busa on the Italian label, an indigenous olive grown by Mate between Punta Salvore and Daila in northwest Istria. The label follows the colour of the ripening fruit, from beige flesh to deep pink and then violet. The olives were harvested between 1 and 13 October 2025, and the oil is organic.
It opens sweet, then moves to a balanced bitterness and pepper that never turn aggressive, and finishes long, with almond, herbs, pepper and artichoke.
That gentle balance makes it easy to use every day, from salads and vegetables to fish.
