Slice into Olivek and the pale paste is studded with dark and green flecks of olive, a little taste of the Mediterranean set into a continental cheese.

It is made by Sirana Biogal in Donji Daruvar, a dairy that began more than twenty years ago as a small milk processing plant and now makes over twenty cheeses. Olivek is a semi-hard, full-fat cow's milk cheese with finely chopped black and green brined olives, made from milk collected only from small farms and gently pasteurised at 65 °C.

The olives give it a salty, tangy flavour with a slightly sharp edge.

Serve it with bread and cherry tomatoes, cube it for an aperitif, or pair it with a glass of dry white wine.

Sirana Biogal is a cheese dairy in Donji Daruvar, just outside the town of Daruvar, that began more than twenty years ago as a small milk processing plant. It makes more than twenty cow's, goat's and sheep's milk cheeses under its 'Sirevi s potpisom' line, using milk only from small farms, pasteurised at a low 65 °C, with no preservatives or artificial additives. A HACCP food safety system has been in place since 2006.
