Cut into a wheel of Cheesenut and you will find pieces of hazelnut set into the pale paste, with a sweet, nutty smell that rises as soon as the knife goes in.
It is made by Sirana Biogal in Donji Daruvar, a dairy in continental Croatia that has been making cheese for more than twenty years. This is a semi-hard, full-fat cow's milk cheese with added hazelnuts, made from milk collected only from small farms, gently pasteurised at 65 °C and free of preservatives.
The dairy describes its nutty, slightly sweet aroma of confectionery hazelnut as the reason so many tasters become fans.
Serve it on a cheese board with grapes and honey, or with a glass of white wine.
