Bakalar Tartufino is a cream coloured spread of Norwegian cod with pieces of black truffle folded through it, and you can still see the flakes and fibres of the fish in every spoonful.
It is made by Baccalà della Mamma, the cod business of the Stefanov family in Bačva, near Višnjan in Istria. It grew out of the Milena family tavern, opened in 1986, where the white cod was so popular that guests began taking it home, and in 1996 the family built its first processing plant.
Expect the mild, savoury taste of cod with the earthy depth of truffle. Serve it on warm crostini as an aperitivo, or stir a spoonful through hot pasta or soft polenta. A chilled glass of Istrian Malvazija suits it well.
