Bakalar Pikantino is a pale red cod spread with a gentle heat. Red pepper and chilli are worked into creamy Norwegian cod, and the pieces and fibres of the fish stay visible.
The recipe belongs to Baccalà della Mamma, the Stefanov family business in Bačva, near Višnjan in Istria. The family first served cod at the Milena tavern, which opened in 1986, and when guests started asking to take the white cod home they turned it into a product, opening their first cod plant in 1996.
The taste is mildly spicy, savoury and rounded. Spread it on grilled bread, spoon it onto boiled potatoes or set it out with crackers and olives before dinner, with a cold beer or a fresh Istrian Malvazija.
