Bakalar na bijelo, cod prepared in the white style, is a creamy, pale spread of Norwegian cod in which you can still see the pieces and fibres of the fish, seasoned simply with garlic, salt, pepper and spices.
The recipe comes from the Milena family tavern in Bačva, near Višnjan in Istria, which opened in 1986. Guests liked its white cod so much that they began ordering it to take home, and by 1996 the Stefanov family had built its first cod processing plant. Today it is sold as Baccalà della Mamma.
Spread it thickly on toasted bread or grilled polenta and serve it as a starter with a glass of Istrian Malvazija. Cod has long been a holiday and fasting dish around the Mediterranean, so it also belongs on a festive table.
