Istarska bjelica is the old white olive of Istria, a tree that grows tall and upright, as if to keep its green-yellow fruit away from impatient pickers.

Boris and Sanja Galić left company jobs in Zagreb to grow olives near Kostanjica, close to the artists' town of Grožnjan in north Istria. They began as weekend growers with twenty trees, and the first harvest from their restored groves came in 2010, which is where the 10 in B10 comes from. The name First Night describes the method: olives are picked by day, taken to the mill at sunset and cold pressed through the night.

Bjelica is a temperamental variety that does not give a big crop every year. Expect a fresh, green oil with the bitterness and pepper of a young Istrian oil.

The Galić family suggest it for hearty salads, a good piece of grilled meat and game.

B10 is the olive oil of Boris and Sanja Galić, a family farm (OPG B10) at Kostanjica near Grožnjan in north Istria. The couple moved from Zagreb and began as weekend growers about fifteen years ago with twenty olive trees, later planting hundreds more and restoring old groves; the B stands for their village of Biloslavi and the 10 for their first harvest in 2010. Under the First Night name they make single-variety oils and the B10 Fusion blend, which won gold at NYIOOC in 2020, and they host tastings with a view over the Mirna valley.
