Tovar is the local word for donkey, and this rare Istrian salami is made with the meat of the Istrian donkey, a native breed of the peninsula.

It comes from AZRRI, the Istrian rural development agency in Pazin, which looks after the region's native animals, from the boškarin ox to Istrian goats, sheep and donkeys. The salami combines good pork with donkey meat and is made by hand to a traditional recipe, following the long Istrian habit of curing meat.

Expect a very lean salami whose flavour is rich, savoury and full, with subtle earthy notes and a clean, refined finish.

Slice it thin and serve it with aged Pag cheese and a glass of Istrian Teran.

AZRRI (Agencija za ruralni razvoj Istre) is the rural development agency of Istria County, based in Pazin and founded by the county in 2003. Together with the Istrian cattle breeders' association it has led the protection of the boškarin, the grey, long-horned Istrian ox, whose numbers fell to about 100 animals in the 1990s and have since recovered to more than 2,000. The agency also works with Istrian goats, sheep and donkeys, and makes small series of gourmet boškarin salami from meat matured in a controlled environment.
