A great deal of attention has been placed on expressing KORAK style in this wine. It consists of a single vineyard Kamenice Sauvignon grapes from the estate, hand nurtured throughout the wine making process. Kamenice is one of our most unique appellations, as the Sauvignon blanc wine that is born from it fully represents the terroir. Because of the lime soil which is not typical for Plešivica, it gives this wine next level minerality. Sticking to the basics, we created a wine made to better express the vineyards and truly respect Kamenice terroir.
Grapes were handpicked, sorted and were pressed gently after short maceration, allowing optimal free-run juice to be used. It was 100% wood fermented and spent 12 months on the lees in large old oak barrels from 1935. that have been passed down from generation to generation, after which the wine was filled in the bottles unfiltered. This elegant wine is bright in appearance with an inviting nose, bursting with smoky and green, herbal aromas and emphasized minerality. The palate is full-bodied, well rounded with a prominent texture and a well-balanced acidity. Fresh and pure flavors of white peach and passion fruit envelope the mouth that concludes with a lingering and rich finish. With such a complex Sauvignon, we turn to wine connoisseurs who expect something more from this variety. Drink now or allow to develop for up to 10 years.
Nose: Complex, slightly smoky notes, herbal notes, vegetative, mineral, nettles, grass clippings, asparagus, peas and elderflower.
Palate: Citrus fruits, white peach and passion fruit. The acidity is well balanced with long lingering finish.
